Ethiopian Yirgacheffe

Return to Africa Coffee Yirga Cheffe, also spelled Yirgacheffe and Yergacheffe, is grown in the Sidamo region of Ethiopia. It is always produced as a ‘washed’ processed coffee and is considered by many to be the cream of Ethiopia’s crop. After the pulp is removed from the coffee cherry, the beans are soaked in fermentation tanks for up to 72 hours This process yields a coffee bean that has a higher acidity and a clean taste that is often called ‘winey’ or ‘floral’.Yirga Cheffe beans are noted for their light body, uneven appearance and an almost earthy aroma when brewed.
